Autumn Ratatouille

A French classic, it's a stew, it's a sauce for polenta, it's a sauce for pasta, it's a nest for poaching an egg,  it's a buddy in the instant pot for some chicken or some lamb - chock full of veg, a capsule of late summer. I recommend saving this one in the freezer for a few months until you're desperate for a taste of summer. 

Ingredients: Organic heirloom tomatoes, organic onions, organic zucchini, organic eggplant, organic sweet peppers, organic garlic, organic thyme, organic basil, olive oil, sea salt, black pepper. 

1 litre, frozen.
