Soup - Blonde Borscht

Like a red beet borscht but with golden beets. One might call it the sexiest of the borschts.

Don't be fooled by this soup! Beets are incredibly nutritious, and but this doesn't just taste like a bowl of beets - it's subtle, and it has a little tang from the vinegar, but enough tame veg like potato and cabbage to be a mellow bowl of comfort. Really shines with a scoop of sour cream or yogurt and a sprinkle of dill or parsley. And if you want to really channel your inner Eastern Euro - a healthy forkful of sauerkraut would really work here. 

Ingredients: Organic yellow beet, organic onion, organic potato, organic celery, organic carrot, organic cabbage, organic garlic, organic parsley, organic dill, black pepper, olive oil, red wine vinegar, citrus zest, organic bay leaf, sea salt.
