Leeks

Leeks are divine sautéed into any soup, with eggs or bacon. Or greens and cream! Sweet and mild flavor, lovely melting texture. Use some of the greens too! Save the very tops of the greens for soup stock. 

Bunch of 3-4 fat leeks.
