Soup - Roasted Beet Borscht

Don't be fooled by this soup! Beets are incredibly nutritious, and but this doesn't just taste like a bowl of beets - it's subtle, and it has a little tang from the vinegar, but enough tame veg like potato and cabbage to be a mellow bowl of comfort. Really shines with a scoop of sour cream or yogurt and a sprinkle of dill or parsley. And if you want to really channel your inner Eastern Euro - a healthy forkful of sauerkraut would really work here. 

It's also an antioxidant workhorse - we have red cabbage, red onions AND red onions contributing to the amazing deep colour, which are also shown to have higher levels of antioxidants than their standard issue compatriots. Eat the rainbow! 

Ingredients: Organic beets, organic red and yellow onion, celery, organic red and orange carrot, organic potato, organic red cabbage, organic kohlrabi, organic garlic, organic parsley, black pepper, olive oil, red wine vinegar, citrus zest, organic bay leaf, sea salt.
